ed got the closest ones. Warlock: MoA is probably your best bet that fits your criteria. The UI is great, the 4 races are fun, combat mechanics are easily understood (a lot like Fantasy Wars or the Elven Legacy series) and plays like a board game. The AI isn't exactly a supreme genius though. It was really horrible when it was first released, but they actually attempt to attack you now. The Armageddon DLC makes the game challenging and quite fun. The Age of Wonders

They have easier to use "compact" water cooling options now. I've been tempted to get one, but my CM Hyper 212-EVO just does such a good job, I have no reason to upgrade. Two fans in a push/pull config have my 4 year old energy hog of a cpu (955BE) idling at 27c, load at 42c. FTL is an amazing game. I got it for $5 and definitely got my playing time out of it. There was a UEFI Bios on the AsRock mobo rig I built for my sister. It was intuitive and seemed like a good thing, but I was peeved because it was misrepresenting the CPU temperatures (thought it was running at 60c idle when in reality it was running at 28c idle... had a small heart attack for a while there). Other than that it's been a great experience. I still prefer an old-school BIOS though, but that's probably because I'm more comfortable and familiar with it.
These guys have less than a half hour to go. They've gone way beyond their goal, but need a few more pounds to reach some of the flex goals they have in mind.

Dropping the CPU in is a piece of cake, just be gentle and make sure those wonderful golden arrows in both in the right corner. The hardest part for me after building 5 rigs is locking in the CPU heatsink... making sure not to lift up and let air bubbles into the thermal paste application. Just keep some rubbing alcohol handy in case you screw up. :)
I heard about Dom3 through these forums when there was those multiplayer forum threads. I thought the price was spendy, but figured it was something right up my alley. I never had to have fancy graphics as long as the gameplay was good. The gameplay is great. On a pure price per hour of play standpoint, I can say I've gotten a better deal on Dominions 3 than any game I've played since SotS prime and Titan Quest. The manual is great, the gameplay is fantastic.
