They did move too far towards easy in LK, particularly with the "round it up and AoE it" nature of almost every trash pull in the entire thing. They've moved back to a better place on both that and on fixing healer mana (which matters now, so tanks aren't constantly being two-shot) in Cataclysm.

Yeah, seriously. The only thing "ruined" by Burning Crusade was for the few people who actually liked 40 man raids. The hardest part of Molten Core was finding 40 people to do it, 20 of which had to be paying attention. Good riddance.
So is there any kind of significant PvE play in Eve? It always reads like a PvP oriented game.

In some ways it IS a game problem. If you make a competitive game, you have to expect players will take the shortest path to victory. Winning matters. That's just how it is. So if the game allows these kinds of strategies to be effective in the hands of players who aren't skilled enough to properly scout and counter them, that's what you'll see.
