So why would you want to have cities with 6+ grain then..? (e.g. I now have a city that has 10 grain due to farms and such)

Hi all! I'm fairly new to fallen enchantress but I got most figured out (I think), except for population. What exactly is the use of popluation beyond 600 (threshold to get your city to level 5)? I thought it would effect gildar production but it seems it doesn't.. Thanks!
