I installed FE original through Stardock's website, then of course used Steam to download and install LH. There seem to be two separate roughly 3.5ish gig installs, one in my steam folder, one in my stardock folder. Can I remove the old FE install without causing any problems for the new LH install? 7 gigs seems like a lot for this game...

I really don't like snaking. It is weird crazy micromanagement that I'd rather not do, so I leave the option in the menu off. But the more valuable snaking is, the more pressure I feel to snake because otherwise I'm playing the game badly. Please do not change the game in such a way that it becomes less fun for me to play, because I either have to do some dumb micromanagement the AIs can't do, or because I am no longer playing the game even kind of optimally.
I dunno; thematically, this strikes me as exactly right. The potions are magical; the apothecary needs magic in order to make them. So it needs essence.
I too lend my voice to the chorus of people saying that a map pack would be pretty meh for me, but I would almost certainly buy a DLC that expanded the selection of monsters, wildlands, quests, etc, or added factions, or things like that.
This happens to me too, reliably, and particularly for quest huts I create with the Altar quest scroll. I unfortunately have no time now, but I have a save with 3 huts where traveling to them does absolutely nothing, as though they were an empty tile.
One problem that is beginning to be more serious as I play into deeper games is that I can't tell which faction is controlling what area. Part of this is that I'm not familiar with the color schemes associated with the various factions yet, but part of the problem is that I am red-green colorblind and many of the colors used for the borders of influence are in the range that it is very hard for me to tell apart.
