I tried several games on "challenging" level and it seemed like I could not get a decent set of planets in my starting region. When I set it back down to "normal", it seemed more generous. Does anyone know if the higher level reduces planet quality?

Good question. Glad to see an answer.
SDC is a terrible design. We need to keep pushing back against Stardock until they change/fix it. We also need to make it hard for hijackers to get updates and to support Stardock in fighting piracy.
The other reason to make economy bases is to increase the basic research/production values of the planet, not just trade routes. Those shouldn't do any harm, unless you absolutely must have a base where they have already placed one. In that case, you'd have to buy it from them, as suggested earlier. I personally wouldn't fork out the money to buy them unless there's a really good reason for it.
The resources are nice, but finding choice planets is more important. You can build Economy bases that will act a lot like those galactic resources, and place them near planets. Sometimes you can catch 2 or 3 of your planets in the radius of a single Economy base. Marko, That's a lot of players for such a small map. I recommend at least a medium map, maybe with 3 AI players. Then you'll see more activity. Your difficulty level will also change their behavior a lot. Even though you're new, it might be good to play standard difficulty level, to see more of what the AI can do. Why is planet specialization inefficient? I agree that some planets can be general-use without hurting anything, and it may even offer flexibility. However, since the Capital improvements are a flat 100% bonus, you will get more bonus, the more capacity you have on a single planet. I try to make my tech, productiion, and economic capitals from large, specialized planets with as many of the same type of building as possible. I get research capitals
Defense is fun. That's the primary reason I use it. I also like knocking out three of the enemy's ships with just one of my own, which can be done with a correctly defended ship. Doesn't always happen, but sometimes it does. I tried combining defenses, and they added together instead of giving two rolls. I know that often I get only one medium hull, then later I see 3 kinds, after researching many more techs. Not sure if it's a bug. I guess a standard check would be to start another game and see if they fail to appear again.
When being addressed by the Drath, the label [playername] is used instead of Terran Alliance. It is only with the Drath that I have seen this happen, such as, "Greetings to the great [playername] and its leader", or whatever. I'm paraphrasing.

When looking at a world map for an undeveloped world, there are bonus tiles sometimes shown. For example, the icon that gives +300% to production, or research, or whatever. I would really like an alert some kind when an enemy ship (an armed ship of a race that is at war with me) crosses into sensor range of a planet. Would only apply to ships that were previously outside sensor range. Maybe a message icon just like the ones that indicate when a ship is built, or production is complete. It seems like the fact that it only channels through the appropriate building types should take care of most of the need to individually tailor the planets. However, if most of your planets have an even mixture of building types, I can see it might be useful to do that. I myself have been much more successful since biting the bullet and putting defense on my ships. I've had a single 1/1 small ship defeat groups of 1/0 small ships. From what Citizen Saber Cherry says, the benefits would increase even more if I used larger ships with superior defense against large numbers of small, low attack ships.
This might be appropriate for the Glitches forum. I have something similar, the sound cuts in and out. Lately it stays on most of the time, but then it'll just fade away. My system is completely different from yours, except my mobo also uses Nforce chipset.
Your solution was very logical, to provide them with more food. But it backfired in this case, creating even more people to be even more unhappy.
