"Fog of the Unknown" and Star colours

The purple star thread made me think of this.

Shouldn't we be able to see all stars (and star types) at the start? Perhaps not all the planets (although, assuming advancement of current tech we should at least be able to guess sizes) but at least that Star X is a red giant, star Y is yellow, Star X is blue...

Seriously, guys, if we have the astronomy and technology to do so now, wouldn't we in the future?

We know where they are in the game.. and until you can get to them does it matter what color they are?

Well, certain stars tend to have better planets. If I know one cluster has a bunch of yellow stars while another is all blue giants, I know to check the former first.
