It's such a simple option that I must be missing it: How do I specify a number of backgrounds and have them change on a set interval?

Hold down Ctrl and select the wallpapers you wish to use. An Adjust random settings option will appear on the right hand side.

Thanks. I had tried Ctrl+A selecting but never tried individually. New question: I'm using multiple monitors. Is there a way to have each monitor display a different image in the slideshow? When I have more than one image selected the options to apply to individual monitors disappear and I'm just left with "Apply to all my monitors", and the images on both screens always match.
