mIRC is good, or Trillian. Trillian is skinnable.

Someone here suggested mIRC to me when I asked the same thing. I love it. Very simple to set up and use.

I was a mIRC user and I switched over to Bersirc to try it out, and haven't went back since:

What I don't like about besirc is that its title bar oftens competes with WindowBlind's title bar skinning. You can see them duel it out when you're moving the window around.

I trashed mIRC after it gave me a nag screen, installed xChat then and still using that.

I don't think Trillian supports multiple servers/channels though.
