I have galactic civilizations 2 through stardock, so it's downloaded. I decided to start playing the game again so I cheacked for updates and downloaded it. How do I uninstall the update. I tried uninstalling the game and downloading it again but it downloads it with the update.

If you are using Stardock Central you need to ensure that the 'Show pre-release versions' is unchecked. Unfortunately you will need to download the entire game again to get back to 1.2.
Once reinstalled i would suggest that you select the game in SDC then click 'file' - 'Archive application' - 'selected application'. This will save the game in its current state to the SDC folder. Using 'Restore application' you can always get the game back to that point again.
One last thing.. Ensure that there is a check-mark in the 'auto-archive on application update' box so the game is backed up each time you update it. This also allows you to return to the previous version if you need to.

Not sure: if you uncheck the 'Show pre-release versions', it will allow you to update to the latest production version (which is 1.2). And it should be an incremental update. I have done it recently (reverting from beta to production). I did suffer from bad transfert rate but I didn't wait too long. So I think I don't have downloaded the whole 1.2 game, only the needed files.
