Now that we've seen some sort of AI in action (although not a very good one), I thought it would be a good idea to come up with different "personalities" that monsters and dungeon creatures could use:
I think monsters should have behaviours and motivations.
So for example giant spiders would tend to stay on one spot on the map waiting in ambush for prey. Most of the others would fit the categories you suggest.
